Let Them Eat Cake......with Berries and Whipped Cream

While I was in Italy, my trainer had a rather significant birthday and I owe her a cake; no it's not the one above, that is a masterpiece.......I've described myself as the anti "food stylist" when it comes to cake decorating, but I can make a cake that TASTES delicious and that's what I did today to give to Kristin tomorrow when she works all my muscles!  I once asked her what her favorite type of cake was, and she said "strawberry shortcake", so I've made a 4 layer strawberry shortcake for her un-birthday.  I began with a basic vanilla cake, my son's favorite, then macerated strawberries, and used the juices to brush into the cake and then whipped cream and mascarpone cheese together with sugar and used that along with the strawberries to fill the cake, and then frosted the top and sides with the remaining whipped cream mixture.  It was simple, and it's going to be de-lish---it will not look like the one above, but I don't think that's as important as how it tastes.  Right now we are still getting beautiful red right through strawberries, and so I'm taking advantage of that, but you can do this with raspberries, blackberries, blueberries, or a combination of berries, and the mascarpone creme keeps the whipped cream from "weeping" or falling off the cake, and it's delicious just layered with fruits in a parfait glass. 

Cuisinart Yellow Cake
Makes two nine-inch layers

2 cups cake flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 3/4 cups sugar
4 large eggs
1 1/2 sticks unsalted butter, softened, and cut into pieces
1 cup buttermilk
1 tablespoon vanilla paste or extract

1.                  Preheat the oven to 375 degrees.  Coat the inside of two 9-inch cake pans with non-stick cooking spray and set aside. 
2.                  Place the flour into the food processor, and pulse to blend.  Remove an set aside.
3.                  Add the sugar and eggs, and process till smooth, then add the butter and process till fluffy.
4.                  Scrape down the bowl, and with the machine running add the vanilla and buttermilk.  Add the flour and process on and off till the flour disappears. 
5.                  Pour into the prepared pans, and bake for 30 minutes, until a cake tester comes out clean. 
6.                  Cool the cakes for 10 minutes, and remove from the pans to a cooling rack to cool completely. 
Cooks’ Note:  If you don’t have a food processor, cream the butter and sugar together, add the eggs one at a time, and the vanilla paste.  Add the flour, baking powder, and soda, alternately with the buttermilk, and beat until smooth.  Proceed as directed. 




Macerated Berries
Makes about 4 cups
4 cups cleaned berries, hull and slice strawberries, saving 10 for garnish
1/2 cup sugar
In a bowl, combine the berries and sugar stirring to blend.  Set aside at room temperature for 1 hour.  Drain the berries, saving the juices for brushing on the layers.

Mascarpone Crème
Makes about 4 cups
2 cups heavy cream
1/2 cup sugar
16-ounces mascarpone cheese
In an electric mixer, beat the cream and sugar until the cream is stiff.  Add the mascarpone and beat again for 1 minute until combined.  The crème can be refrigerated for up to 3 days, or frozen for 1 month. 

 
Assembly

Slice the cake layers in half horizontally.  
 
 Lay strips of waxed paper onto the edges of the cake plate and center one of the cake layer halves on the cake plate.   

 
Brush the cake with some of the berry juices, then spread with a layer of strawberries. 

 Top with some of the mascarpone crème.   
 
Repeat until you have 3 layers spread, and top with the last layer.  

 
 Frost the top and sides of the cake with the remaining crème.   





Cut the remaining berries in half and press into the sides and the top in a pattern.   

 
Gently remove the waxed paper strips from the bottom of the cake, cover and refrigerate for at least 8 hours, or overnight.  Serve the cake chilled.

Celebrations on the Fourth of July

Having grown up in a military family and then marrying someone who made the military the career, when it's time to celebrate a holiday related to our freedom I'm up for it!  I know that the word patriot has been batted around by politicians accusing each other of not having enough, but being a patriot doesn't necessarily mean that you follow the party line, whatever it may be; the founding fathers certainly didn't do that if you read anything about that period in our history. These men argued, they fought over words, and ideas and in the end, they constructed one of the most incredible documents that has stood the test of time.  That's what happens when you respect the people you work with.
As Dr. C. and I celebrate this fourth of July, of course, there is food here at Chez Phillips....we are a small crowd this year, and it feels just fine....the food will be Mediterranean in flavor, with a few all-American nods to this holiday.

Grilled Mediterranean Vegetables
Serves 6
Grilled vegetables are easy, and they can be made ahead; I did these in the morning, and kept them at room temperature for serving.  Any leftovers will go into pasta with leftover pesto shrimp.
1/2 cup extra virgin olive oil
1 teaspoon dry oregano
1/2 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
One medium purple eggplant, cut into rounds 1/2-inch thick
One medium yellow bell pepper, cut into quarters
One medium orange bell pepper, cut into quarters
2 medium zucchini, sliced lengthwise into 1/2-inch pieces
1 medium red onion, sliced 1/2-inch thick

Preheat the gas grill for 10 minutes.  If you have  veggie rack for the your grill this is the time to use it.
combine the oil, oregano, basil, salt and pepper in a small bowl.  Brush the vegetables on one side with the mixture and lay them brushed side down on the grill.  Brush the vegetables with the oil rub, and cook until the vegetables are softened, turning frequently.  Remove from the grill and arrange on a platter.  Before serving, drizzle with balsamic vinegar.
I took the onions, and tossed them with a simple vinaigrette, and they were delish over the chicken!



Grilled Lemon Oregano Chicken
Serves 6
Simple and you can do it ahead so you can serve it at room temperature or cold. 
1 cup extra virgin olive oil
1/3 cup fresh lemon juice
2 teaspoons dried oregano
pinch red pepper flakes
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
6 chicken breast halves, skin and bones removed

 In a bowl, whisk together the oil, lemon juice, oregano, peppers and salt.  Place the chicken in a zipper-top plastic bag and pour the marinade over the chicken.  Seal the bag and refrigerate at least 4 hours or over night.  Remove the chicken from the marinade, preheat the grill for 10 minutes, and grill the chicken over indirect heat, 4 minutes on each side, until cooked through.  Remove from the grill and allow to rest for 4 minutes, before cutting on the diagonal.  The chicken can be served warm, or cold, and leftovers can be frozen for another use. 




Sun Dried Tomato Pesto Shrimp
Serves 6
Sun dried tomato pesto is full of flavor and perks up otherwise bland shrimp in this great dish. 
1/2 cup sun dried tomato pesto
1 pound jumbo shrimp, peeled and deveined
Heat the pesto in a large skillet, and add the shrimp, turning when the shrimp begin to turn pink.  Cook until all the shrimp are pink.  Remove from the skillet and serve immediately.


Mom's Potato Salad


Serves 8 to 10
It wouldn't be a summer meal around here, without this old standby....my father-in-law was known to horde jars of this in the fridge when I would bring it to a barbecue.  
 
 6 pounds red potatoes
6 ribs celery, finely chopped
1/2 cup finely chopped red onion, or 6 scallions (white and tender green parts), finely chopped
1/2 cup chopped sweet pickles
6 hard-boiled eggs, peeled and sliced
1/4 cup finely chopped fresh Italian parsley
1/2 cup finely chopped European cucumber
1/4 cup olive oil
2 tablespoons fresh lemon juice
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
2 cups mayonnaise
1 tablespoon prepared yellow mustard
1 tablespoon sweet pickle juice
1 to 2 tablespoons milk, as needed, to thin the dressing
1 teaspoon sweet paprika

1.      Cook the potatoes in a large pot of boiling salted water to cover until just tender, about 25 minutes.  Drain, let cool a bit, and refrigerate until cold. 
2.      Peel the potatoes, cut into bite-size pieces, and transfer them to a large salad bowl. Add the celery, onion, pickles, about 2/3 of the eggs, the parsley, and cucumber.  Sprinkle with the oil, lemon juice, salt, and pepper and toss to blend.
3.      Do-Ahead: At this point, you can cover and refrigerate for up to 8 hours.
4.      In a medium-size bowl, combine the mayonnaise, mustard, pickle juice, and milk, whisking to blend until smooth.  Pour half the dressing over the potatoes and stir gently to coat.
5.      Do-Ahead: At this point, cover and refrigerate the salad, the remaining dressing, and eggs for at least 4 hours or overnight.
6.      One hour before serving, taste the salad and add additional dressing, tossing gently to coat. 
7.      Cover the top of the salad with the remaining sliced eggs, sprinkle with the paprika, and refrigerate until just before serving.  


Cucumber, grape tomato and onion salad
Serves 4
Simple, and a great contrast to the bland grilled veggies, this salad is a taste of summer. 
 
4 Persian or Kirby cucumbers, peeled and cut into 1/2-inch dice

1 spring onion, finely chopped
1/2 cup extra virgin olive oil
1/4 cup rice vinegar
salt and pepper to taste
In a large bowl, combine the cucumbers, tomatoes and onion.  In another bowl, whisk together the oil and vinegar, and taste, adding salt and pepper.  Pour over the vegetables, and toss to coat.  the salad can stand at room temperature for up to 4 hours.



White Peach and Blackberry Crisp with Homemade Vanilla Gelato
 Serves 6
White peaches from Fitzgerald farms, paired with organic blackberries in this delicious crisp.  
Home made gelato puts it over the top. 
 
1 cup blackberries
8 medium white peaches, peeled, pitted and cut into wedges
1/4 cup sugar (or more if needed)
2 tablespoons cornstarch
Combine the black berries, peaches, sugar and cornstarch, and stir to blend.  Pour into a 9-inch square pan, or a 10-inch round pie plate.  









Preheat the oven to 375 degrees.  


1 cup all purpose flour
1/2 cup firmly packed brown sugar
1/4 cup sugar
pinch salt
1/2 teaspoon ground cinnamon 
1/8 teaspoon grated nutmeg
8 tablespoons cold butter, cut into 1/2-inch bits
1/3 cup chopped pecans
In a bowl, combine the flour, sugar, sugar, salt, cinnamon, and nutmeg.  Work in the butter with a pastry blender, or your fingertips until it begins to form a crumble.  Stir in the pecans, and crumble over the fruit in the baking dish.  



Bake for 30 to 40 minutes, until the fruit is bubbling and the topping is golden brown.  
Serve with vanilla ice cream.

You Say Potato

 
 I've never met a potato I didn't like, and as we come up on the holiday weekend, I know that potato salads will grace many tables this weekend.  We all have our favorites, whether it has dill and red potatoes, mixed with mayonnaise, or a French potato salad tossed with a vinaigrette, or a roasted potato salad, they are all delicious and as I've said a few times here, I think the sides are sometimes more important than the main dishes and this holiday weekend is no exception.  So I am sharing my favorite sides for you this weekend.  
  • A little tutorial on potato salads: only use low starch potatoes, like reds, Yukon golds, or white creamers, and boil them with the skins on, protecting the potato from getting waterlogged.  
  • Cool the potatoes completely before cutting.  
  • Use a high quality mayonnaise; I love Best Foods/Hellmans
  • Check your paprika, it should be bright red, and have an aroma, if not toss it and buy new, it actually has a flavor and an aroma, it's not just a garnish.  
  • If you are making hard boiled eggs, use older eggs, not those fresh from the hen, otherwise, they will not peel well.  
  • When using mayonnaise for potato salads, save a bit of the dressing for re-dressing the salad just before serving.  The mayonnaise will be absorbed by the potatoes, and the salad may appear dry before serving, good to have a bit of dressing in reserve, just in case. 
Mom’s Old Fashioned Potato Salad
Serves 8 to 10
6 pounds red potatoes
6 ribs celery, finely chopped
1/2 cup finely chopped red onion, or 6 scallions (white and tender green parts), finely chopped
1/2 cup chopped sweet pickles
6 hard-boiled eggs, peeled and sliced
1/4 cup finely chopped fresh Italian parsley
1/2 cup finely chopped European cucumber

1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper

6.      One hour before serving, taste the salad and add additional dressing, tossing gently to coat. 
7.      Cover the top of the salad with the remaining sliced eggs, sprinkle with the paprika, and refrigerate until just before serving.  





Dilly Red Potato Salad
Serves 8 to 10

6 pounds medium-size red, Yukon Gold, new white, or fingerling potatoes
6 ribs celery, finely chopped
8 scallions (white and tender green parts), finely chopped
3 tablespoons distilled white vinegar
3 tablespoons olive oil
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 cups mayonnaise
1/2 cup sour cream
1/4 cup milk
Finely grated zest of 1 lemon
1/4 to 1/3 cup finely chopped fresh dill, to your taste
1 teaspoon sweet paprika

1.      Cook the potatoes in a large pot of boiling salted water to cover until just tender, about 25 minutes. Drain the potatoes, let cool a bit, and refrigerate until cold. 
2.      Peel the potatoes, cut into bite-size pieces, and transfer them to a large salad bowl.  Add the celery and scallions, sprinkle with the vinegar, oil, 1 teaspoon of the salt, and 1/2 teaspoon of the pepper, and toss to coat the potatoes. 
3.      Do-Ahead: At this point, you can cover and refrigerate overnight.
4.      In a medium-size bowl, whisk together the remaining 1 teaspoon of salt and 1/2 teaspoon of pepper, the mayonnaise, sour cream, milk, lemon zest, dill, and 1/2 teaspoon of the paprika.
5.      Toss the potatoes with half the dressing, stirring gently to coat.
6.      Do-Ahead: At this point, cover and refrigerate for 4 to 12 hours before serving.
7.      Thirty minutes before serving, toss the salad again, adding more dressing if needed.  Sprinkle with the remaining 1/2 teaspoon of paprika and serve. 
French Potato Salad
Serves 8 to 10
6 pounds Yukon Gold or red potatoes
6 scallions (white and tender green parts), finely chopped
1/4 cup chopped fresh Italian parsley
1/4 cup packed fresh basil leaves, thinly sliced
3 cloves garlic, cut in half
1 cup extra virgin olive oil
1/3 cup red wine vinegar
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper

1.      Cook the potatoes in a large pot of boiling salted water to cover until just tender, about 25 minutes.  Drain, let cool a bit, and refrigerate until cold. 
2.      Peel the potatoes, cut into bite-size pieces, and transfer them to a large salad bowl. Add the scallions, 2 tablespoons of the parsley, all but 1 tablespoon of the basil, and the garlic and toss gently to combine.
3.      In a medium-size bowl, whisk together the oil, vinegar, salt, and pepper until blended.  Pour half over the potatoes and stir gently to mix.
4.     
5.      One hour before serving, toss the salad with additional dressing, remove the garlic cloves, and garnish with the remaining 2 tablespoons parsley and 1 tablespoon basil. 



Cole Slaw
Serves 8 to 10
For the Cabbage:

12 cups cored and thinly sliced green cabbage (2 heads)
2 cups cored and thinly sliced red cabbage (1/2 head)
6 medium-size carrots, shredded

1.      In a large salad bowl, combine the cabbages and carrots.

For the Dressing

2 cups mayonnaise
1/4 cup distilled white vinegar
3 tablespoons sugar
3 tablespoons milk, or as needed

1.      In a medium-size bowl, whisk together the dressing ingredients until smooth.  Taste the vinegar and sugar and adjust if necessary. Pour over the slaw and toss to combine well.
2.      Do-Ahead: At this point, cover and refrigerate for at least 2 hours and up to 8 hours.
Variations:
·         If you’d like to omit the red cabbage, substitute additional carrots or green cabbage.
  Poppy Seed Coleslaw: Right before serving, stir in 1/3 cup of poppy seeds

Barbecue Baked Beans
Serves 10

8 strips bacon, cut into 1/2-inch dice
1 1/2 cups finely chopped onions
 Four 15.5-ounce cans plain baked beans
1/2 cup ketchup
1/2 cup bottled barbecue sauce
1 tablespoon prepared yellow mustard
2 tablespoons Worcestershire sauce
1/2 cup firmly packed dark brown sugar

1.      In a 4-quart saucepan over medium heat, cook the bacon, stirring, until crisp.
2.      Remove all but 1 tablespoon of the bacon fat, add the onions, and cook, stirring, until softened and starting to turn golden.
3.      Add the beans, ketchup, barbecue sauce, mustard, Worcestershire, and brown sugar and stir to blend. 
4.      Simmer over low heat, stirring frequently, for 45 minutes.
5.      Do-Ahead: At this point, you can let cool, cover, and refrigerate for up to 2 days.  Gently reheat.


Perfect Corn on the Cob
Serves 8 to 10

12 quarts water
2 tablespoons sugar
12 to 14 ears fresh corn, shucked, with silks removed

1.      Bring 6 quarts of water and 1 tablespoon of sugar to a boil in each of 2 large pots.
2.      Add half the corn to each pot and return the water to a boil.  Remove the pot from the heat.
3.      Do-Ahead: The corn can sit in the water for up to 30 minutes before serving.

  
As we celebrate the Fourth of July, our independence day, let's remember those who serve our country in far off places, leaving their loved ones at home.




The role of a military spouse is difficult, and deployments can seem never ending; celebrate and thank those who serve, and their families as well they are the real American heroes.
