We have all been affected by cancer in one form or another; my mom and mother in law both died of breast cancer, which puts my daughter and I at greater risk. Urge your friends to get a mammogram if they haven't had one, and wear pink this month to honor those we've lost and those who are living on.
In honor of this pink month, I was trying to figure out what I could make that would look pink and still be edible--cotton candy came to mind, but that's not really food.
Pink marshmallows are the right color, but not food.
So, I've come up with a super smoothie, that will turn pink right before your eyes, and it's loaded with lots of good-for-you ingredients to start your day off right. So, bottoms up!
Although I have the big daddy of blenders, the Vita-Mix you can make this in any blender, but this big daddy is the bomb!
1/4 cup cranberry juice cocktail--gotten get those antioxidants in there, and I love the commercials!
Bolthouse farms makes some great smoothie add-ins--this one is a fave. Add 1/2 cup.
Frozen fruit; this is a blend they sell at Costco called "Festival Blend" --- it's just fruit, nothing else--about a hand full (1 cup) This one has papaya, mango, strawberries, and pineapple in it.
Then let her rip!
Drinking from a wine glass at 6 a.m. is always special!

Pretty in Pink Smoothie
Makes about 2 cups
1/4 cup cranberry juice cocktail (or Cran-Raspberry, Cran-apple)
1/2 cup Bolthouse Farms Passion, Orange, Guava
1 cup frozen mixed fruit
- Pour the ingredients into a blender, and blend on high for 45 seconds until smooth, and serve.
- Cooks' Note: If you would like to add a scoop of proteinpowder, to this feel free. I like to add an envelope of Emergen-C Electro Mix a Potassium, Calcium supplement.
